Some good friends of ours gave us some meat today. I always marinate it. I have for years. I know not everybody marinates it, but it’s what I like. We picked up this recipe card at the Shawano County Fair back in the early 1980s. I’ve modified it a bit, but not a whole lot. Why it’s called “Cowboy’s Marinade” I have no idea. I score each piece a number of times and pound it with a meat hammer and let it soak in this mixture overnight.
Cowboy’s Marinade
1/4 tsp dry mustard
1/2 tsp dried rosemary leaves
1/2 tsp pepper
2 cloves garlic, minced
1 tbsp Worchestershire sauce
2 tbsp catsup
1 tbsp A-1 steak sauce
2 tbsp salad oil
3 tbsp soy sauce
1/3 cup wine vinegar
1 tsp liquid smoke

That’s a bit tough! They say white man’s flesh is too salty. I found that to be true.
It’s our diet. Americans eat a lot of sodium.
